School is back in full swing and my days are filled with backpacks, lunch kits and homework! The one thing I had kind of forgotten about was the "back from school hunger". Its not like a little bit hungry, its like I have not been fed for a week hungry!
I hate giving snacks out at this time too, even healthy ones, as my kids will graze happily away and then push their food around the plate when the evening meal is ready. So here to save the day is the smoothie. A few frozen fruits and a blender, and my kids are happy to wait for the food to arrive at the table, rather than climb into the pantry and start chewing.
I was recently sent some Grace Brand Coconut Water to test and I knew as soon as it arrived that it was destined to party with some fruit to make a refreshing smoothie. I hate to throw food away, so I have little bags stashed in my deep freeze of peeled, chopped fruit such as strawberries, raspberries, watermelon and mango. As soon as the fresh fruit starts to look a little mushy or wrinkled it gets chopped and frozen, ready for a cool, thick smoothie.
Alfie loves to push the buttons on the blender- he just hates the noise!
WATERMELON, BERRY AND COCONUT REFRESHER
- 2 cups cubed frozen watermelon
- 5 frozen strawberries and or raspberries
- 310ml (1 can) Coconut Water
- Add all ingredients to your blender and blend until smooth.
- Serve now to keep the hungry school kids happy or wait till they are in bed and add white rum or vodka, sit back and sip!
