LEFTOVER LOVER

Throughout the year I plan meals to minimise leftovers.  Christmas is the exception to this rule- leftovers are essential! 

There are so many leftover uses for the Christmas dinner but one of my faves is the Bubble and Squeak Cake.  A true British classic making use of leftovers from Sunday lunch and especially Christmas lunch.  There is no exact recipe as it all depends on what you have leftover but as a rule potatoes of some kind are essential as they are the glue that holds it all together.

My Bubble and Squeak cakes for Boxing day included the following cold leftovers:
- roast potatoes
-brussel sprouts with chestnuts and bacon
-gingerbread stuffing
-sweetcorn
-carrots

I simply added everything to a food processor and whizzed till it was all chopped up small- you are not going for baby food consistency.

I added the mix to a large bowl, added an egg and hand mixed and shaped into burger shaped patties.

Heat some butter in a frying pan and fry till they are heated through and you have a wonderful colour on each side.  I also fried some slices of leftover gingerbread stuffing and added the leftover groovy (gravy to anyone else not in the Chatterton house). 

So love your leftovers- they can bring as much joy as the meal they were cooked for!
